Confused State

I think our state is totally confused when it comes to weather...
Really?
We were blessed with 70+ degrees on Friday and Saturday. Everyone in the neighborhood came out from hibernation to enjoy.  It was great getting to gossip visit.  So much fun while it lasted. Today the temps dropped. But it is only the start of nastiness yet to come. 
Checking out the national weather service website...we can get up to 16 inches of snow starting tonight and going into Tuesday. 
Really?
Mother Nature was not nice by teasing us with lovely Spring-like weather...

Tax season starts today. That means I am busy busy BUSY at work. I hate trying to drive in nasty weather. I need to work. 
Did I really just say that?
I hope the weather people are wrong!

Alone Time

We all have those moments... you know... those moments we just want a little alone time. 

Really....

One day, I would like to be able to go to the bathroom  ALONE!

I never lock the door... heck I can't even shut the door all the way.

If I SHUT the door all the way, I have these little claws scratching at the door...

Hubs just repainted the door, so it really is in my best interest to leave it open just a crack.

Anyhow, this little guy has to be by his mommy at all times when she is home....

I guess I am just special like that.

Even when I take a bath...

He curls up on my robe. 

Good thing he is blind.
I guess it is better than my child walking in to ask me a question while she is on her cell phone.  Let's just have a party in the bathroom!  Invite all the neighbors!

Cherry Limeade

Do you like a good Sonic cherry limeade?  If so then this is just for you!   I make this sometimes when I have friends over and it is ALWAYS a big hit. 

Gather:
1 - 2 liter bottle Sprite
1 - can minute maid limeade frozen stuff
1 - jar maraschino cherries
1 - lime

This is so easy to prepare.... all you do is dump the Sprite and Limeade mix in a punch bowl

Next I slice the lime into decorative slices to float around....  I then dump in the jar of cherries.... juice and all.
If my husband cooperates, I usually send him for a bag of sonic crushed ice while I am getting things ready and dump some of that in the bowl also.

Funk

Today i am totally in a funk!

I have to rant---


I just have to say.... I hate stupid clueless people.
----I mean really how many times do I have to explain something?  How hard is it to make A=A?  I thought it was pretty obvious that A can not = Z.

To sum it up, it means, you should take caution when merging into traffic and enter when it is safe to do so.

DO NOT just pull into traffic going 25mph when the flow of traffic is 75mph.

While we are talking about driving... OK OK "we" are not talking driving... I am...
What happened to slower people keep right? 
If you are driving in what is deemed as the fast lane... come on... please go the speed limit?

Laziness is another issue with me today.... seriously.... why do people have to point fingers at others and say... that's not my job, or I don't have time (I am to busy talking to my friends).  Suck it up and get it done. It's work, just do it. It will not kill you.

Time on my hands...





I was home because of yucky weather and well, decided to make homemade cinnamon rolls for the first time ever...  Found a somewhat simple recipe and the rest was history.


4 1/4 to 4 3/4 c. all-purpose flour
1 pkg. active dry yeast
1 1/4 c. milk
1/4 c. granulated sugar
1/4 c. butter
1 tsp. salt
2 eggs
6 tbsp. butter, softened
1/2 c. packed brown sugar
2 tsp. ground cinnamon

Powdered Sugar Glaze



Step 1: In a large mixer bowl combine 1 1/2 cups of the all-purpose flour and yeast. Heat the milk, granulated sugar, the 1/4 cup butter and salt just until mixture is warm (120 to 130 degrees) and the butter is almost melted, stirring constantly.



Step 2: Add milk mixture to flour mixture; add eggs. Beat with an electric mixer on low speed for 30 seconds; scrape sides of bowl constantly. Beat on high speed for 3 minutes. Using a spoon, stir in as much of the remaining flour as you can. (Dough will be soft.) Turn dough out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately soft dough (3 to 5 minutes total). Shape dough into a ball.



Step 3: Place dough in a lightly greased bowl; turn once. Cover; let rise in a warm place until double (about 1 to 1 1/2 hours). (The dough is ready for shaping when you can lightly and quickly press two fingers 1/2 inch into dough and indentation remains.)



Step 4: Punch dough down. On a lightly floured surface, divide dough in half; shape each half into a smooth ball. Cover; let rest for 10 minutes.



Step 5: On lightly floured surface roll half the dough to 12x8 inches. Spread with 3 tablespoons softened butter. Combine brown sugar and cinnamon; sprinkle half over rectangle. Roll up from a short side. Seal edges. Make a second roll with remaining dough, butter and sugar mixture. I actually changed this and covered it with lots of melted butter and brown sugar.... I then sprinkled regular sugar and cinnamon over the dough.




Step 6: Slice each dough roll into 8 pieces. Arrange slices, cut side down, in a greased 13x9x2 inch baking pan. Cover; let rise until nearly double (about 30 minutes).



Step 7: Bake rolls in a 350 degree oven for 25 to 30 minutes or until light brown. Invert at once onto a wire rack. Cool slightly. Drizzle rolls with Powdered Sugar Glaze. Serve warm.



Makes 16 rolls.

Powdered Sugar Glaze:

Combine 1 cup sifted powdered sugar, 1 teaspoon vanilla, and enough milk (about 3 to 4 teaspoons) for drizzling consistency.

You Got it ALL Wrong!

Mr Weatherman,
Excuse me!! Hey you got it all wrong!  Last night you you said a light "frizzle"(that's freezing drizzle) and a little bit of snow to follow... MAYBE an inch!  Awesome I can deal with that.  However, I was not happy to wake up and find this:
A frozen solid sheet of ice?  Really? Oh I got it... the weather pattern changed... ohhhhh we got rain last night.  Yup that doesn't go good with 17 degree weather. *SIGH* 

The cool thing is - no school.  This will give Kobi a little more of this:

She can rest all day and be ready for tomorrow. 

Good thing I watch the news though.... the schools emergency phone call stating school was closed, well it came AFTER we would have left for school. Better late than never I guess.

We have to get out this afternoon to get to the dentist.  Thank goodness he is not to far away.  The best part of the day is I did this last night:

Delicious Dish Day

So guess what day it is?????  I was off Monday and did a little extra work and tahhhhhh daaaaaaa here it is:
I think it would be neat if everyone could share one of their favorite recipes....  Since I am so computer challenged  we may have to do this the hard way...

Buffalo Chicken Breast ~ Crock Pot Style



What you need:

4 Boneless, Skinless Chicken Breasts

1/4 cup hot sauce
1 Tablespoon vinegar
1 Tablespoon Worcestershire Sauce
2 Tablespoons melted butter
Paprika
1 Tablespoon cornstarch
What to do:

 Place chicken in crock pot. Mix together remaining ingredients (except cornstarch) and pour over chicken. Sprinkle with paprika. Cook on Low for 6 to 8 hours.  Add a tablespoon of cornstarch after it is done to thicken sauce.



This chicken can be shredded up and served on a toasted bun. You can serve it up with baked beans and cole slaw. You can also use it diced on top of lettuce for a salad - add a few cheese crumbles and mmmmmmmmm.

Crafty Weekend

First going to start off by saying.... if easily offended.... please don't continue!  Just saying...



I love the Oklahoma wind on recycle days.  Because there are not lids on the recycle containers, the stuff blows all around when it is set out to the curb. ALSO, how smart would it be for people to put the paper and lighter things at the bottom of the tote?  Every Monday I have to pick up other peoples trash recycled goods out of our yard. Today is a holiday.  There is no trash service.  Many people have still set their stuff out to the curb. If they leave it there until Wednesday, the re-scheduled day.... the bins may be pretty empty and half the recyclables will be gone... blown away.  Blown into my yard. When I went to clean the trash from our yard.... I found this.  

I am guessing SOMEONE had a crafty weekend!

DELICIOUS DISH DAY

One of the main purposes for starting this blog was to share some of my prized possessions.... my recipes.  Seems as though every time we have friends over, I get asked for a recipe of something that I served. I am not going to lie... I love it!  I decided to blog them and direct people there.... so much easier.  But getting into blogging and making friends and stalking reading other blogs.  Recipes are eehh.  I felt I needed to blog about other things also....So I am thinking I am going to try and keep to the original plan and starting doing recipes on Tuesdays and Thursdays. I gotta come up with some catchy phrase though... I am thinking "Delicious Dish Day".  My goal is to make a button for this and have everyone share.... I will get there.  One Day.....

Spinach! 

Everyone loves spinach, right?  NO?  Really?  Well you will after this recipe! Here is a YUMMY Spinach Dip that is SO SO easy! This dip is always a hit!

Here is what you will need:

  • 2 packages of chopped frozen spinach (like pictured above)
  • 2 packages of the Dry Italian Dressing Mix
  • 1 16 oz tub of Sour Cream

Here is what you do:
  • Thaw and drain the spinach.
  • Chop up the spinach a little more.
  • Combine all the ingredients into a large mixing bowl and stir!

See I told you it was easy!

I use this dip with the wheat thins toasted chips... the garden veggie kind.
Totally Yummy!  I promise! Try it!

Don't even look at IT!

So I guess last night a paranormal being slipped into my room and turned off my alarm. This can be the only explanation of why my alarm did not go off this morning. I would NEVER forget to set it.  I swear I set it, I know I picked it up and set it on the far corner of my night stand.... you know... the one farthest out of my reach so I have to MOVE to turn it off hit the snooze. So I must have set it.  We have ghosts. They turned it off.  They wanted me late for work....

So Wednesday is the hubs day off.  YEAH!  I am on flextime  for the most part and I woke up at the time I normally wake up the Kobmonster. SO it all worked out....

Well except this.  I was driving to work at a different time so I got this:

Do NOT go into the light. Stop where you are. Turn away from it. Don't even look at IT.

Good movie.... thinking of this quote made me want to turn around and go back home. But  I didn't....

Thank God It's Friday


I don't know where the week went....BUT, I am so happy it is Friday.  I am in need of a bit of rest.  Aren't we all though? We have no "real" plans this weekend and no commitments - except with the grocery store. YEAH!

So I am lame.... just going to leave you with a little funny today.


A business man got on an elevator in a building. When he entered the elevator, there was a blonde already inside and she greeted him by saying, "T-G-I-F" (letters only).
He smiled at her and replied, "S-H-I-T" (letters only)."
She looked at him, puzzled, and said, "T-G-I-F" again.
He acknowledged her remark again by answering, "S-H-I-T."
The blond was trying to be friendly, so she smiled her biggest smile and said as sweetly as possibly "T-G-I-F" another time.
The man smiled back to her and once again replied with a quizzical expression, "S-H-I-T."
The blond finally decided to explain things, and this time she said, "T-G-I-F, Thank Goodness It's Friday, get it?"
The man answered, "Sorry, Honey, It's Thursday."

What's in Your Pot?

Tax season is coming.  That means I will be looking harder for quick easy supper ideas.  I get so tired of cooking the same things over and over. Here's an easy yummy one that I thought I would share....


Easy Cheesey Chicken Tater Crockpot Dinner

What you need:
32 ounce bag tater tots

4 diced strips of bacon (precooked)
4 boneless skinless chicken breasts
3 cups Colby jack cheese
3/4 cup milk
salt and pepper


What to do:


1 Spray crock pot with cooking spray
2 Layer 1/2 the tater tots on the bottom of the pot.
3 Sprinkle with 1/4 of bacon bits.
4 Sprinkle 1/3 of the cheese over the bacon and tots.
5 Top cheese with the chicken breasts.
6 Sprinkle chicken with salt and pepper to taste.
7 Top chicken with another 1/3 of cheese.
8 Sprinkle with another 1/4 of bacon bits.
9 Add remainder of the tater tots.
10 Top with final 1/3 of the cheese.
11 Pour milk over the top.
12 Set crock pot to high and cook 3-4 hours

GOOD MORNING!




It’s been a while since I have made it to work around 7am. My office is on the East side of the building, so this is my view when I get there in time to catch it.



2011 has started off just fine. Everyone seems to be making, resolutions, goals, or rules…. I am not big on resolutions or goals for New Years. I live with a teenage daughter. My goal is to survive and come out on top of the situation (whatever it may be that day, hour, minute). It’s just how I roll these days…


Looking back, on 2010… I did enjoy it. 2010 was a good year. I think. It definitely was a crazy year!


The hubs had surgery on his foot and was off work for a while during the summer. On the flip side, he did get disability pay AND we got a lot of free time at the lake in the RV with family and friends.


Kobi volunteered to work at a church camp this summer for a few weeks. Her job was helping take care of staff’s children. She loved it. Well, maybe not the day that she got poo’d on….


I went through surgery on my jaw…. Still recovering, but doing well. I wish that there was some sort of miracle grow for hair to make it grow faster…. I am tired of my short hair cut. Maybe by this time next year my hair will be grown out past my ears.


Kobi’s braces came off. That was great. Done with braces for good I hope. Between her and I, there have been monthly trips and checks to the orthodontist for a good 4 years now. Breaking up is hard to do, but I will enjoy the extra money each month. OH WAIT…. No I won’t. That money went to Kobi’s car. What was I thinking?


Lasik surgery was also part of the line up in 2010. I would recomend it to anyone. It is AMAZING!

OK, so I guess 2010 wasn't so bad after all.... Hope 2011 is just great!

Better Late, Than Never!

So over the last few weeks, I have worked a total of 4 days.  Mass CRAZINESS!  I think we had about 3-4 Christmas Events this year. The grand finale was Christmas Evening when Kobi got this...

I think she was happy.

The day after Christmas there was a mad scramble to get all the decorations down.  We needed to prepare for our Annual New Year's Eve Bash. This year we repeated the 80's theme.  I wish I would have remembered to take some pictures!

Tomorrow, it is time to head back to work.... I don't want to go. Period.  I have been spoiled by getting to take the last of my vacation time. UGH!
