Banana Cookies

Here is a cookie recipe that I found deep in my box of recipes. I do not really know when or where I acquired this recipe, but it is a yummy one and a good way to use up ripe bananas!


What to gather up:
1/2 cup unsalted butter
1 cup sugar
1 egg
3 medium mashed bananas
1 teaspoon of baking soda
2 cups flour
pinch of salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1 cup of pecans

What you need to do:
-Preheat oven to 350
-Cream butter & Sugar until fluffy
-Add egg to mixture and cont. to cream back to the fluffiness.
-In another bowl, mix the baking soda and bananas.
-Let set for 2 minutes.
-Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined.
-Fold into the batter the pecans. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Let cool on wire racks.

Makes about 30 cookies.
